Hi, I picked up a '81 200 trike. Good rubber, back plastic, rack, runs but smokes a little. I could probably recover the seat and give it a little paint and have a respectable trike, but is it worth the time ratherthan parting it out on Ebay?

Yes, it's worth the time to fix it up a little. These machines don't bring that much on Ebay parted out.
Also, there is no need to make 2 postings in different forums with basically the same question. I have removed you other one.

Long time no speak. What do you think the trike would fetch in fair to good condition? I was thinking 250-350. Does that sound right?

That totally depends on location and timing. I have sold one of these for $500 in fair condition, and I have also struggled to sell one of these for $275 in basically the same condition.
I parted one out thinking I could do better on ebay. I didn't even get $175 parting it out ( Ebay ). I have a lot of parts for these ( and 90-110's ) on hand. Yes, I am selling them slowly on ebay ( at a loss on most parts ). I am only pushing these parts to move inventory to make way for other stuff.

keep it fix it up to turn a buck, you wont get much in parts on ebay as howdy said, also depends where you are for selling price, i bought my 82 mint condition extreamly low hours for 650$ canadain
