I have a 200es engine that was partially disassembled and stored under my workbench. It ran when removed but it had a couple leaky seals and it was a bit of a smokah. My plan is to assemble this engine with some of the better used parts I have from my projects and some new gaskets.
I'll put the engine in a roller I have here and use it to drag stuff around the homestead.

How would I go about checking crank bearings?
Is there a way to test the oil pump while the engine is disassembled?
Anything else I should look at?

Any advice would be much appreciated!

IF your are in it, you replace bearings. Its 40 years old. If not your are taking a huge gamble. These machines never have a easy life. Once you open it you will find something wrong.
