I just rebuilt my 87 KXT 250 (top end, crank seals) and i still have blue smoke coming out the exhaust. Where could it be coming from??

Well 2-strokes have a light smoke coming out most of the time due to them burning oil and gas together.

My plug fouls after 10 minutes though

Sounds like jetting then. When the bike fouls the plugs is it just sitting their idling?

No, I'll take it out for @ 10 min. then it will foul. My jetting is stock, what will cause it to start running rich, the choke is working fine, what else could it be??

stock jettings, but is it stock pipe? if you didnt change the jettings when you changed the pipe, thats your problem

The bike is totally stock, nothing has been changed. It just started doing this all of a sudden. Could it be the needle jet??

well you say you just rebuilt it, you probably put the crank seals in wrong, or something like that.

ill bet something in your carb came loose or soemthing i had my needle jet come loose one time wile i was driving my old yz250 and it did the same thing.

i would take a realy good look at your carb man it sounds like something is messed up with it i had the same thing happen to a yz250 of mine but it poored gas out the over flow too lol atleast it isnt sucking air and melting your top end .thats one good thing to look at you will figure it out just keep at it but seriosly tare into that carb i think that is ware your problem lies try to get trailprotrailpro hands on another carb and throw it on the bike and see if the problem goes away.

Do the carbs overflow tubes have fuel running/dripping out with the trike just sitting not running, with the fuel valve open? If so, I would replace the float valve.

I learned this the hard way having to carry a couple of new plugs every time I rode.

yes, I notice that if i leave the gas valve on, i notice a little bit of gas under the bike, not alot though.

Get a Moose carb rebuild kit, $16 from dealer. It will include all the carb parts that should be periodically replaced for good reliable running.
