Is there a specific chart on the board (if there is I apologize, can't find one) that has information on tire size and gear correlation? I think it would really help a lot of people out.
As in what size tire helps low end and what gear would retain top end throughout the most common sizes.

Smaller tire will lower geared. taller tire opposite. All this to a certain degree.

I know that. I'm looking for a reference chart that will show figures as to what will produce what result with different sizes.
Example:
22" rears with a 42 tooth sprocket = "insert MPH here", moderate accleration
20" rears with 37 tooth sproket = more low end and equal top end
That kind of thing but for all tire sizes and sprocket combos

Maybe this will help, you will need to find out your high gear ratio, then substitute your final drive for their ring & pinion, by dividing your rear sprocket teeth by your countershaft. http://www.csgnetwork.com/rearendgearcalc.html
