Is there supposed to be a donut or crush gasket between the head and the pipe or does it just bolt right up?

Yes, a copper crush gasket is required.

They are included in top end gasket kits and full engine gasket kits, might be worth while to buy a kit so you have anything and everything you might need in the years to come.
