My 200es only starts and runs when I put the choke on. When I lift the choke up and down it acts as a throttle. When the choke is disengaged it simply dies. What does this eman and what can I do to fix it? Also what does the mixture screw do when you screw it inwards?

The air screw is to be adjusted for qucikest throttle response OFF OF IDLE. It has between very little and nothing do do with carburetion or how the bike runs once the throttle is slightly open, and nothing to do with your problem. If I udestand right, your saying it only runs with the choke on, even when warm, and when you open the choke, it dies. Right?
Time to remove the carb, take it cmpletely apart, and clear every orifice, making sure you can blow carb cleaner or air completely through each one, and make sure your air filter/ intake is clear and clean.

You are correct tim. My bike only idles when the choke is on. When it is warm it still will only run when the choke is on. The strange thing being that you can adjust the idle speed by moving the choke up and down.
I have taken the carby off twice and cleaned it with fuel and compressed air. Do you think that the rubber and aluminium seal between the engine head and the carby could be the problem if it is slightly sucking air. ie the o rings are worn.
When it idles with the choke o ndoes it mean its running lean or rich?
