i was lookin around for new pistons and found that 200x pistons come in sizes anywhere from 64-67mm, in .5mm increments. which is the stock size/bore?

Stock is 65mm
I think wiseco are only available in increment of .5mm(not 100% sure), so you lost many oversize,check for OEM or some other aftermarket,mostly available in 0.25 increment

they were wiseco, now that i think back to it. if i was to bore it out (if its ok to do on a 200x?), what should i go with? and which piston size would i need?

that depends on what size you have.i would measure your cylinder and just go with the next available oversize..010,.020 and so on

Pistons are avalible from 63mm-67mm
63mm being the 185s model std stock size and 65mm is the 200x std size . All the cylinders were interchangable .

im wantin to rebuild it before the summer. how much should i bore it over? and which piston size would that be?

or mechanic that's going to do the bore job . Might only need a .5mm or 1mm over just dont know till its checked out .

You really need to take the cylinder to the machine shop for checking before you buy the piston or you may end up having to buy a second piston. As has been said, 65mm is stock - or to be precise, the manual quotes 64.990 to 65.000mm for the cylinder (service limit is 65.100mm). The matching piston is between 64.962 and 64.982mm.
Once you have had it measured properly and checked for taper and ovality you can buy your new piston. The Wiseco is a little heavier but a bit stronger than the OEM. That extra strength is only needed if you are going to rev beyond the factory limit, as the forged Wiseco can take higher revs. Otherwise OEM is fine.
