Planning on ordering some 12'' ITP SS rims for my 250BR (mudder) with mudlites. I noticed on each rim it will say 5 + 2 or 2 + 5. What do these numbers mean? which number rim will I have to get for the front so that I wont need a spacer?

the off set is the number of inches on each side from where the bolt holes are. so 5 inches on one side and 2 on the other in a total of 7 inch wide rims
you want an offset with equal numbers for your front tire. Thats how it is on my 110. now on your big red it may be diff for like the front brakes or something. best way would be to measure the rims you have now on each side.
but for the rear a big offset is nice, that way it makes it wider and better handling.
